Corn cobs simmered to make the sweetest broth

My friend Melinda dropped off 2 dozen ears of Indiana sweet corn last week, so I turned them into the best corn chowder ever. I start with a recipe from Mark Bittman’s original How to Cook Everything Vegetarian cookbook and then I put my own spin on it. 

BTW – I think this is the best cookbook ever written. Hands down. I have the updated version too, and it has pretty pictures, but I still like the doorstop version better.
