Do you pull recipes off of the web and then put them into a stack for “someday”?
Years ago, I found the recipe for The Drunken Sandwich, printed it out, and added it to my stack of crusty papers. Last winter, I was going through that stack looking for inspiration and re-discovered this gem. I adjusted it a bit to make it just right for a cool winter night. It’s easy, belly-warming, and the perfect whole meal sandwich to conquer your appetite.
Toasty, creamy, with the bite of sauerkraut, and the spice from the mayo/Sriracha sauce.
- 2 slices of bread, or 1 lavash, tortilla, etc.
- About 1 tsp mayo (I use Sir Kensington’s Mayo)
- 1-2 tsp shredded cheese (I use Daiya or Violife)
- 1 tsp Sriracha
- 1-2 heaping tablespoons of sauerkraut
- Sliced avocado
- Potato chips
- Salt and pepper to taste
- In a small bowl, combine mayo and Sriracha. Spread the mixture on one side of each piece of sliced bread.
- On one slice of bread, sprinkle 1 tsp cheese, top with sauerkraut, top with avocado slices, sprinkle with salt and pepper, top with remaining cheese. Cover with the remaining slice of bread.
- Pop sandwich into the microwave for 30 seconds to just help the cheese begin to melt.
- Remove the sandwich from the microwave, lift one piece of bread up, and layer potato chips onto the stacked ingredients for added crunch
- Place sandwich on a hot griddle with a bit of melted butter, and cook until the bread is toasty and brown, about 2-3 minutes per side. Flip sandwich over and repeat on the other side.
- With a spatula, press down on the sandwich to make it a really melty, delicious mess.
- Eat. Then wipe the mess off of your face.

This sandwich isn’t drunk and has no alcohol in it. But it is pretty good at midnight on Saturday night. Plus, these ingredients are very forgiving, so use the “little of this and a little of that” cooking ratio method. and make it your own. You’ll be a hit!
